Foodservice Brand
The Brewpub will be operated under the strategic
partner’s brand and the exclusive rights for this brand and
the related intellectual property will rest exclusively with
our strategic partner.
Set up and operate the 'Foodservice' side of the business
1.Recruitment, training & development of the
foodservice staff
2.Setting up of kitchen
3.Interiors & space design
4.Day to day management of the brewpub including
service, billing etc.
5.Kitchen operations
6.Quality control & hygiene
Hands On Consulting + Technology Transfer Engagement
1. Delivery of beer brewing side of the business from drawing board to final conception
2. Brewery planning, equipment layout, engineering
designs & drawings etc.
3. Identification & qualification of suitable vendors –
tailor made to needs & budget
4. Supervising the equipment manufacturing to ensure
delivery that confirms to budgets & timelines
5. Assistance in procuring & maintaining all relevant
Excise & non-excise licenses (e.g. Pollution Control,
Directorate of Industries, Local body permissions etc.)
This includes i) Detailed check-lists of licenses to
obtain, ii) Lists of all documents needed for each
permission, and iii) Where needed, technical reports
(ex. Report on environmental impact - necessary for
clearance from Deptt. Of Environment, and Pollution
Control Board)
In effect the partner just allocates the budget & the space
for the brewery – while BrewCrafts takes care of the
complete implementation on a ‘turnkey’ basis.
(This is for a new set-up - In case of existing set-up the
brewcrafts team will simply take over the operations with
minimal (if any) changes to the set-up)
Operate and Manage the 'Beer Brewing' Side
Operate and manage the 'beer brewing' side of the business 'from the grain to the tap.'
1. Raw material sourcing & handling
2. Day to day brewery operations & management
including actual beer production, excise accounting,
quality control & hygiene etc.
i) This will be handled by a highly trained team
of Doolally Brewmasters, Assistant Brewers &
Support Staff deputed by BrewCrafts to the
partner location on a permanent basis
ii) In case of unavoidable absenses, we will
provide back-up brewmaster & staff
immediately – ensuring no operating hold-ups
3. Developing new beer recipes and training the brewing
staff to implement them to keep the beer menus
‘always fresh’
The operating costs of the brewing operations are completely
borne by BrewCrafts. This includes- Salaries of Brewery staff,
Raw material cost for making the beers, utilities cost for
making the beer etc.
Costs like Excise duty, any other duties/taxes as applicable,
Repairs & maintenance of equipment are borne by the
Strategic Partner at actuals.
Brand Licensing: ‘Doolally Premium Microbrews'
BrewCrafts will license their brand ‘Doolally Premium
Microbrews’ to the partner location. The beers manufactured
in the brewery set-up & operated by BrewCrafts will be sold
exclusively under this brand name.
All the rights relating to the brand name ‘Doolally
Premium Microbrews’ and the intellectual property
associated with this brand will rest exclusively with
BrewCrafts.
